Tabasco Sauce

I'

 

1.5 tlbsp minced garlic

20 birdseye chilli minced(or as many as you can stand

3/4 cup minced onion

1/2tsp salt

1tsp chilli oil (or olive)

2 cups water

1 cup vinegar

 

 

Combine peppers garlic onions salt oil & saute for 3 - 4 mins

 

Add water & simmer for about 20 - 30min

stiring occassionally

 

Make Sure you don't breathe deeply over mixture as it is quite strong

 

Once most of the water has evaporated put aside to cool

 

Once cool place in food proccessor & add Vinegar to combine

 

Strain thru a mesh sieve & let stand in fridge for about 2 weeks to let the flavours develope
