Dijon Mustard

2 Cups white wine

1 onion quartered

2 cloves garlic

110g Dry mustard powder

3 Tlbspn Honey

1tlbsp Olive oil

Salt

 

Simmer onions , garlic ,wine together for approx

5 min. Don't boil or it will get a bitter taste.

 

Strain

 

Pour liquid back into saucepan & disgard the solids. Add Dry mustard Honey oil & salt

whisking well to remove any lumps.

 

Watch out for the fumes when you add mustard they are quite strong

 

Pour into a glass jar & refrigerate for at least a week to let the flavours age.
