Bechamel Sauce

1/3 cup plain flour

2 cups milk

125 g grated cheese

Pinch nutmeg

Pinch salt & pepper

60g butter

 

Melt butter on low heat till it foams

 

Whisk  the flour into the butter quickly making it as smooth as possible

 

When it changes colour slightly it means the flour is cooked

 

Remove from the heat

 

Slowly add the milk but keep whisking so no lumps form

 

Return to low heat

 

When it thickens & just starts to get a few bubbles coming through Remove from heat and add your cheese & nutmeg

 

You can use Cheddar Mozzarella Swiss whatever you like

 

Season to taste
